Known as "pulped natural," or semi-washed, the honey-prep method requires constant sunshine and a very low humidity in order to properly dry the bean. Meticulous care and supervision are also needed to ensure a high-quality harvest.
The actual honey-prep process includes picking the ripe coffee cherries and de-pulping them immediately, and putting them out in the sun to dry without washing them. The sticky inner layer is thus left on the beans allowing each one to soak in the sweet pulp or the "honey." The result is a much sweeter flavor!
